This past weekend we celebrated our sweet friend Karyn's birthday (who happens to be turning only 9 years old this Leap Year) at The Cupcake Store in Mission Viejo. Yes, we acted like "grown up little girls" at this fun birthday, I mean what better way to celebrate a 9th birthday :) We decorated a delicious cupcake, ate pizza, drank champagne and had some great girl talk. What more can a girl ask for?!? This place was very quaint and very accomodating with us loud girls. We stayed for about 2 hours and had the most enjoyable time, and did I mention how good the cupcakes were (and that is saying a lot from a girl who is not much of a cupcake girl....I know weird right?!?). If you are looking to have a birthday party for a big or small girl, I highly recommend this place. Thanks to Rosette for all the fun decorations and painted wine glasses we all received. Karyn, I hope you had a fabulous day celebrating your 9th birthday, as it only happens every four years!

Recipes
I absolutely LOVE Trader Joe's, I am there at least 2 times a week, I love that store (not to mention it holds a special place in my heart since that is where I met my hubby 14 years ago). This weekend I found a few great recipes that I tried this week that has all ingredients from Trader Joe's and I just thought I would share.
Marsala and Mango Ginger Meatballs
1 package TJ's Party Size Mini Meatballs ( I used veggie meatballs)
1 jar TJ's Marsala Simmer Sauce
1 jar TJ's Mango & Ginger Chutney
Preheat oven to 350°. Place meatballs in a baking dish (appx. 9" x 9") and cover with masala sauce. Place in oven and let cook for about 20-30 minutes, or until meatballs are heated through and sauce is hot. Serve warm alongside a dipping bowl of Mango & Ginger Chutney
I served it over rice with some veggies. Even my son who isn't one for too much "flavor" LOVED these! These would also be great as an appetizer.

Soy Chorizo Vegetarian Chili
1. Heat olive oil in a pot over medium-high heat. Add onions and saute until softened, about 5 minutes.
2. Add all remaining ingredients and heat to boiling. Reduce heat and simmer on low for 15-20 minutes.
This was SO good! And don't be afraid of the Soy Chorizo, it really is good stuff (much better than the real stuff)!

Upside Down French Toast Bake
Just thought I would share this yummy french toast bake that I made this week and brought to work. Everyone loved it! The recipe is very easy and you prepare it the night before and pop it in the oven in the morning. What better way to start your morning with the yummy smell of french toast baking away :)
In a 9x13 pan melt together:
1 stick of butter
1 cup of brown sugar
1 1/2 tsp cinnamon
Beat together:
6 eggs
1 1/2 cups of milk
Smooth butter mixture over bottom of pan. Layer with slices of bread -2 layers deep, pouring half the egg mixture in between the layers and on top (*I sprinkle a little bit of sugar and cinnamon on layers as well)
Cover and refrigerate overnight. Bake uncovered at 350 degrees for 30-40 minutes. Serve with berries and fresh whipped cream!

Crafting for Valentine's Day
It's February already, the month of LOVE, the month to do fun crafts and make sweet treats for the ones we love. Valentine's Day isn't one of my favorite holidays but I do enjoy it for what it is and of course having two little ones who love to celebrate any holiday make it that much more fun. This past week I made a few little "V" day banners after some inspiration I received in the form of a gift from my sweet friend Vanessa. She made me this cute banner.
